While the wife and kid were tooling around Texas exhausting themselves and filling up on all sorts of good American grub, I sat down with my shelf of cookbooks and pulled a page full of recipe ideas. It gets difficult to go to a cookbook cold and dredge up ideas so I use the page as a sort of cheat sheet. I have the recipe name and the cookbook and page. It worked wonders. I made a killer batch of Chicken Pad Thai from Mark Bittman’s “Minimalist” cookbook. It took about ten minutes to cook and was some awesome on an unreasonably cold late March night. I had to have a second helping because I know my wife will be eating the leftovers for lunch this week. Yeah, it was that good. Had I not gorged on it last night I would have never seen it again.
A great, simple recipe. Ripe for variation and chimp simple. Bittman continues to rock.
