There are few things more associated with summertime than fresh-made Pico de Gallo. Literally translated to “beak of the rooster,” pico is a warm weather treat that goes well with corn chips or even on its own as a side dish. The batch you see above consisted of about 6 tomatoes, 1 large onion, 2 bunches of cilantro, 1 jalapeño (seeds and all), 1/2 a lime of juice, S&P and 1/2 a shot of tequila. My dad always made his with the tequila and I’m not about to mess up a good thing. Somthing about the spirit adds a bit of smokiness and really helps to blend the flavors. ¡Buen Provecho!
